Quick snack idea: Thai roasted cashews

I was inspired by the herbed roasted cashew recipe I tried last year to make thai flavoured cashews. I used homemade thai curry paste, but you can use your favourite. Just add a few spoonfuls to the cashews and add some oil if needed to coat the cashews evenly. Then bake them at 180°C for 20 minutes.

These are delicious on their own or added to salads.
