Coriander and ginger pesto glass noodle salad


If you liked my previous glass noodle salad, you should try this. I spotted this Coriander and ginger pesto recipe on the Ideas magazine Facebook page and thought it would be perfect for a glass noodle salad. I wasn't in the mood for a traditional salad and this was the perfect solution. It was done in less than 15 minutes. I put the cashews in a pan to roast, put the noodles in hot water, blended all the pesto ingredients, chopped and grated the vegetables and then mixed it all together.
