Noodles with Sweet Ginger Scallion Sauce

Scallions are called spring onions here in South Africa. According to Wikipedia they also have a lot of other names I didn't know about: green onions, spring onions, salad onions, table onions, green shallots, onion sticks, long onions, baby onions, precious onions, yard onions, gibbons, or syboes.

This is a really easy recipe and you can make it so many ways. You can use whatever vegetables you want and have rice instead of noodles or only vegetables if you want. You can find the recipe here.

This is the sauce before I added the spring onions. Sesame oil is pretty expensive, so I only used one tablespoon and another tablespoon of regular canola oil. I didn't have chili oil, so I added a few chili flakes.

There's a lot of spring onions in here.

I used carrots and mushrooms. I added the sesame seeds directly to the pan instead of toasting them separately and adding them later.

The original recipe uses soba noodles. I've seen them a lot on Pinterest lately, but I haven't seen them in any stores yet. I had this gluten free spaghetti, so I used that. It tastes like regular wheat pasta to me, but it's more translucent.

Then you just mix everything together for a delicious meal.

I'm definitely going to make this again in the future and try some variations.
